This delicious, bright pasta salad is free of gluten, dairy, & mayo but full of nutritious, colorful vegetables & flavor! The garbanzo beans, fresh heirloom tomatoes, and avocado all bring various textures to make the dish very enjoyable. A tasty, refreshing dish to enjoy in the summer that takes only 10 minutes to put together! With a higher ratio of vegetables than pasta, you can stay on track this summer while still enjoying delicious foods.
Gluten-Free Summer Orzo Pasta Salad

Ingredients: • 4 oz gluten-free orzo pasta (I used Delallo Gluten Free Corn & Rice Pasta Orzo) • 1 can garbanzo beans • 2 cups baby heriloom tomatoes, diced in half • 1 avocado, diced • 4 cups raw spinach • 2 tbsp olive oil
Instructions: 1. Cook pasta according to package until al dente (approx. 5 min). Let cool then add to a large bowl.
2. Drain liquid from can of garbanzo beans & rinse throughly. Add beans to bowl with pasta.
3. Dice tomatoes in half & avocado into small cubes. Add to bowl along with raw spinach.
4. Drizzle olive oil over ingredients & mix well. Salt & pepper to taste.
5. Place in the refrigerator for at least 1 hour to chill, & serve cold.
