Sweet & Tangy Breakfast Salad

Ingredients: • 2 small-medium russet potatoes, cubed • 1 cup broccoli florets • 1 tbsp avocado oil • 1 tbsp pasture-raised butter or ghee (I use Green Valley Organics Lactose Free Butter for non-dairy option!) • 2 organic, pasture-raised eggs • 4 cups of mixed greens • 1 avocado, diced • 2 tbsp dried cranberries • 1/2 tsp olive oil

Ginger Dijon Dressing: • 1 tbsp dijon mustard • 1 tbsp apple cider vinegar • squeeze of lemon juice • drizze of olive oil • 1/4 tsp dried oregano • 1/4 tsp garlic powder • 2 drops of Doterra ginger oil or can sub a few dashes of ground ginger • small amount of filtered water to thin • salt to taste

Instructions: 1. Preheat air fryer to 390F for 3 minutes (I selected the roast option). If you don’t have an air fryer you can roast the potatoes in the oven by preheating to 425F.

2. Throughly wash & dry potatoes. Dice into 1″ cubes then place into a large bowl & evenly coat with 1/2 tbsp avocado oil, & a dash of salt & pepper.

Air Fryer: Place into air fryer & roast for 15 min or until browned, tossing frequently. Oven: Spread on baking sheet & roast for ~20-25 min, flipping halfway.

3. Wash & cut broccoli into small florets. Heat remaining 1/2 tbsp avocado oil in a pan over medium heat then add broccoli & cook for 5 minutes or until tender.

4. In a separate pan, heat 1 tbsp butter or ghee over low heat. Crack both eggs into pan & gently cook, breaking yolk & flipping for 5 minutes, or until cooked through.

5. Add mixed greens to a large bowl then drizzle 1/2 tsp of olive oil on top & gently massage into greens. Add diced avocado & dried cranberries. Top with roasted potatoes & eggs.

Ginger Dijon Dressing: 1. Add all ingredients into a small bowl & mix well. Dressing will be thick like a paste. 2. Slowly add small amounts of filtered water until dressing is of a thinner consistency. 3. Salt to taste & drizzle over salad. Mix well & serve.
